1. Heat butter and oil on medium heat in a large saucepan.
2. Add cinnamon, cardamom, black pepper and cumin seeds. Fry for a minute.
3. Add onions and fry until golden brown, about 5 to 10 minutes.
4. Add garlic, ginger, tomatoes, yogurt, spices and green chili if using. Cover and cook for about 10 minutes. If too dry, add a little water.
5. Add the veal pieces, mix to coat with the gravy, cover and cook on low heat for 30 minutes.
6. Add potatoes and 1 cup of water. Mix, cover and continue cooking for 30 minutes.
7. Add remaining 3 cups of water and increase the heat to medium high for the water to boil.
8. Add lemon juice. Taste and adjust salt to make sure that it is a little saltier than you like, because the rice will absorb salt when cooking.
9. Add the rice, mix well and cook uncovered for about 5 minutes.
10. Lower the heat, cover and cook for 12 minutes on low heat.
11. Turn off heat and let it rest for about 15 minutes.
12. Enjoy on its own, with fresh “kachumbari” (onion salad) or yogurt.
