Tandoori Chicken Pilau

Pilau is an aromatic, scrumptious, and one of my favourite one-pot comfort foods. It is a combination of rice, meat and spices, packed with flavor and guaranteed to make your taste buds explode.

Ingredients

  • ¼ cup butter
  • 2 Tbsp oil
  • 1 cinnamon stick
  • 4 whole cardamoms
  • 1 tsp whole black pepper
  • 1 tsp whole cumin seeds
  • 1 onion, sliced
  • 1 Tbsp garlic paste
  • 1 Tbsp ginger paste
  • 1 tomato, diced
  • 1 green pepper, diced
  • 1 Tbsp tomato paste
  • 4 Tbsp yogurt
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp tandoori masala
  • 1 tsp pilau/biryani masala
  • Salt to taste
  • 1 green chili (optional for spice)
  • 1 chicken, cut into medium pieces
  • 1 potato, cut into chunks
  • 1 chicken cube
  • 2 cups basmati rice, soaked and washed
  • 4 cups water
  • Juice of 1 lemon
  • Cilantro for garnish

Instructions

1. Heat butter and oil on medium heat in a large saucepan.

2. Add cinnamon, cardamom, black pepper and cumin seeds. Fry for a minute.

3. Add onions and fry until golden brown, about 5 to 10 minutes.

4. Add garlic, ginger, tomatoes, green pepper, tomato paste, yogurt, spices and green chili if using. Cover and cook for about 10 minutes. If too dry, add a little water.

5. Add the chicken pieces, mix to coat with the gravy, cover and cook on low heat for 15 minutes.

6. Add potatoes and 1 cup of water. Mix, cover and continue cooking for 30 minutes.

7. Add remaining 3 cups of water and increase the heat to medium high for the water to boil.

8. Add chicken cube and lemon juice. Taste and adjust salt to make sure that it is a little saltier than you like, because the rice will absorb salt when cooking.

9. Add the rice, mix well and cook uncovered for about 5 minutes.

10. Lower the heat, cover and cook for 12 minutes on low heat.

11. Turn off heat and let it rest for about 15 minutes.

12. Garnish with cilantro. Enjoy on its own, with fresh “kachumbari” (onion salad) or yogurt.
