Instant Pot Fried Rice

This is a quick, easy and flavorful classic dish, made with rice, vegetables, protein of your choice and aromatic seasonings. It can be served as a side or a main meal.
Ingredients
- 1 cup basmati rice, soaked and rinsed
- 2 Tbsp oil
- 1 small onion, chopped fine
- 1/2 tsp garlic paste
- 1 chopped green chilli (optional)
- 1 cup mixed frozen vegetables
- Dash of soya sauce
- 1 tsp salt or to taste
- 2 cups water
- 2 eggs
- 1 cup cooked shrimp, chicken or any protein of your choice
- Spring onions, chopped, for garnish
Instructions
1. Turn on the Instant Pot select the Sauté mode on normal. When the display reads hot, add the oil.
2. Add onions and garlic paste. Sauté for a few minutes, stirring constantly to avoid sticking to the pot.
3. Once onions are light brown, add frozen veggies, soya sauce, green chili if using, and salt. Cook for a few minutes to mix everything up.
4. Add rinsed rice and water and mix well. Cancel sauté, close the lid and set to seal. Select Pressure Cook mode on high and set the timer for 5 minutes.
5. While rice is cooking, heat a frying pan on the stove, and scramble the eggs.
6. Once rice is cooked, let the pressure release naturally for 10 minutes, then release remaining pressure.
7. Open the pot, fluff up the rice with a fork and add scrambled eggs and protein of your choice.
8. Turn off the instant pot and let rice cool for the moisture to dry up.
9. Transfer to a serving dish, garnish with spring onions and enjoy!
