Instant Pot Coconut Meat Mogo (Cassava)
Mogo is also known as cassava or yuca. It is a root vegetable popular in East Africa, especially in the Coastal region. Cooking it with coconut and meat makes it the ultimate comfort food.
Ingredients
- 2 lb cassava, peeled and cut into chunks
- 2 Tbsp oil
- 1 lb veal
- 1 tomato, chopped
- 1 green chili, chopped (optional for spice)
- 1 Tbsp garlic paste
- 1 Tbsp ginger paste
- Salt to taste
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 can coconut milk
- 1 cup water
- 1 cup frozen green peas (optional)
- Juice of 1 lemon
- A few sprigs of cilantro, chopped
Instructions
1. Bring water to boil in a large saucepan and add cassava chunks. Boil until half cooked, about 10 minutes. Drain water and set aside.
2. Heat oil in instant pot on Saute mode. Add meat, tomatoes, chili (if using), garlic, ginger, salt, turmeric and coriander powder. Saute for about 5 minutes for the flavours to combine.
3. Add the boiled cassava, coconut milk and water. Close lid and pressure cook on the meat setting for 30 minutes.
4. After the pressure has released, open the pot and stir the mixture. Add green peas (if using), lemon juice and cilantro.
5. Transfer to serving dish and enjoy!
